Pork Femur Bone Soup
Ingredients:
- Pork Femur Bone Cut
- 8 cups water
- 2 slices ginger
- 2 cloves garlic, smashed
- 2 scallions, cut into 2-inch pieces
- 1 daikon radish, peeled and cut into chunks (optional)
- 2 carrots, peeled and cut into chunks (optional)
- 1/2 cup goji berries (optional)
- Salt to taste
- White pepper to taste
- Fresh cilantro or scallions for garnish
Steps:
- Clean the pork femur bones by rinsing them under cold water. Blanch the bones in boiling water for 5 minutes to remove impurities. Drain and rinse the bones under cold water again.
- In a large pot, add the blanched pork femur bones and 8 cups of water. Bring to a boil over high heat.
- Once the water is boiling, reduce the heat to low. Skim off any foam or impurities that rise to the surface.
- Add the ginger, garlic, and scallions to the pot. Cover and simmer on low heat for at least 2 hours. For a richer flavor, you can simmer for up to 4 hours.
- If using, add the daikon radish and carrots to the pot and continue to simmer for an additional 30 minutes, or until the vegetables are tender.
- If using, add the goji berries during the last 10 minutes of cooking.
- Season the soup with salt and white pepper to taste.
- Remove the bones and any large pieces of ginger, garlic, or scallions from the pot.
- Ladle the soup into bowls and garnish with fresh cilantro or scallions.
